Pumpkin Cookies

Pumpkin Cookies

  • 1/2 cup Shortening
  • 1 1/4 cup Brown Sugar
  • 2 Eggs Beaten
  • 1 1/2 cup Canned or Cooked Pumpkin
  • 1/2 tsp. Salt
  • 1/4 tsp. Ginger
  • 1/4 tsp. Nutmeg
  • 1/2 tsp. Cinnamon
  • 1 tsp. Vanilla extract
  • 2 1/4 cups Flour
  • 1 tsp. Baking Powder
  • 1 cup Raisins
  • 1 cup Chopped Nuts

Cream together shortening and brown sugar.  Add beaten eggs, pumpkin, salt, ginger, nutmet, cinnamon, vanilla.  Add flour & baking powder to mixture.  Mix well.  Stir in raisins and nuts.  Bake at 400 degrees for 15 minutes.
