Pumpkin Chocolate Whoopie Pies


3c flour 

1t baking powder 

1t salt

1t baking soda 

2T cinnamon

1T ginger

1t ground cloves

2c sugar

1c oil

3c pumpkin puree

2 eggs

2T unsalted butter, room temp

1/2c heavy cream

1c confectioners sugar

1/3c unsweetened cocoa powder

Oven to 350 degrees. Whisk together flour, baking powder, baking soda, salt, and spices in a bowl. In another bowl, whisk together sugar and oil until well combined. Add pumpkin puree, and whisk until combined. Whisk in eggs and vanilla. Add flour mixture to pumpkin mixture; whisk until fully incorporated. Drop heaping T of dough onto prepared baking sheets, about 1 inch apart. Smooth tops with a wet fingertip. Bake until cookies just start to crack and cake tester comes out clean, about 15 min. Transfer to racks, and let cool completely Mix on medium-high, beat butter, cream, cocoa, and confectioners’ sugar until pale and flu≠y, 2 to 3 min.Spread filling on flat side of half the cookies; sandwich with remaining cookie
